Our veal calves come to us from a licensed Organic dairy farm and are bull calves that have little value in the dairy industry.
They are brought home, bottle fed and introduced to hay and Sandy, our momma cow, who then adopts them and will let them nurse besides their twice a day bottle. Sandy stays with them throughout their lives mothering and protecting them. She takes them out to graze when all the cattle are let out in the springtime and has mothered as many as five at a time, including her own calf. Needless to say we make sure Sandy get plenty of highly nutritious feed. We feel amazing lucky to have a cow like Sandy.
Unlike traditionally raised Veal our Veal is called 'Rose Veal' or 'Pastured Veal'. They are allowed free graze and never locked up in a small dark stall to be force fed only milk until butchering. The meat is mild, flavorful and incredibly tender.
